A standard known as CSA C22.2 No. 60335-2-36:20 outlines the security standards for commercial cooking equipment that is electrically powered. With Canadian modifications, it is an implementation of the widely accepted IEC Standard 60335-2-36.
The standard covers commercial cooking and baking ranges, ovens, hobs, hob elements, and comparable kitchen equipment used in hospitals, bakeries, butcheries, restaurants, and other commercial food processing facilities. The voltages used by the appliances specified by this standard are not to exceed 480 volts for other appliances and 250 volts for single-phase appliances connected between one phase and neutral.
Both appliances that use electric energy and those that use other types of energy are covered by the standard. The goal of the standard is to address frequent risks connected to these kinds of appliances. It does accept that extra regulations set by national health authorities, labor protection authorities, water supply authorities, and other similar entities would be required for equipment used in automobiles, ships, or aircraft.
Appliances made specifically for industrial use or those destined for areas with unique characteristics, including corrosive or explosive atmospheres, are exempt from the standard's requirements. Additionally, steam cookers, forced and steam convection ovens, hot cabinets, and microwave ovens are not included because they are covered by different regulations that are specific to those products.
