Commercial electric bain-marie appliances must comply with the safety criteria of CSA C22.2 No. 60335-2-50:20. With Canadian modifications, this standard is an adaptation of IEC Standard 60335-2-50.
This standard's scope includes electrically powered commercial bain-marie equipment used in food-processing facilities such as commercial kitchens, restaurants, canteens, hospitals, bakeries, and butcheries. It applies to appliances with rated voltages up to 480 V for other appliances and 250 V for single-phase appliances connected between one phase and neutral.
Provisions for gadgets using energy sources other than electricity are also included in the standard. It focuses on safety requirements and ways to address the frequent risks related to these kinds of appliances.
It is significant to note that further specifications can be required for appliances used in automobiles, on ships, in aircraft, or for outdoor use. National health authorities, labor protection authorities, water supply authorities, and other comparable organizations may have particular standards that vary by country.
Appliances made specifically for industrial use or those meant to be used in situations with corrosive or explosive atmospheres, however, are exempt from this specification. Additionally, it excludes equipment needed to produce food in large quantities continuously.
