The safety standards for electrically powered commercial hoods that are intended for installation over commercial cooking appliances are covered by the IEC 60335-2-99:2003 standard. These hoods are not intended for use in homes.
Hoods used in a variety of locations, including restaurants, canteens, hospitals, bakeries, and butcheries, must adhere to the standard. It includes vent hoods for culinary equipment such as ovens, griddles, griddle grills, and deep-fat fryers.
For single-phase hoods linked between one phase and neutral, the rated voltage is limited to no more than 250 V, while for other hoods, it is limited to 480 V. It is vital to remember that this standard only applies to single full units and hoods that are sold as separate components and may be put together to create a working unit with a fan.
