The safety of commercial electric dishwashing machines is the main topic of the CAN/CSA-E60335-2-58-01 standard. In commercial kitchens and businesses, these machines are used to wash plates, dishes, glassware, cutlery, and similar items. The standard outlines particular specifications for these devices, such as the rated voltage, which should be no higher than 480 V for other appliances and no more than 250 V for single-phase appliances.
The standard is applicable to many models of commercial dishwashing equipment, including conveyor, batch, and brush machines. It also includes appliances that use other sources of energy besides electricity. The standard's aim is to assure the safe operation of this equipment by addressing common risks connected with it.
The standard does note, however, that extra standards might be required for appliances used in vehicles, on ships or airplanes, in tropical locations, or for disinfection reasons. In some nations, national health authorities, labor protection authorities, water supply authorities, and similar bodies may additionally impose more regulations. Appliances used in areas with unique characteristics, such as corrosive or explosive atmospheres, dishwashers that do not function as a functional unit, separately driven transport devices, and industrial appliances used in the food industry, are not covered by the standard.
