The Gas Food Service Equipment Standard, also known as ANSI Z83.11-2016 (R2021) or CSA 1.8-2016 (R2021), is a set of recommendations and specifications for recently created gas food service equipment. The range, broiler, oven, fryer, kettle, steam cooker, and other appliances used in commercial, industrial, institutional, and public assembly facilities are covered by this standard. It also includes outside equipment made for carts or trailers.

According to the standard, the equipment can be utilized with liquefied petroleum gases, natural gas, produced gas, mixed gas, and propane gas. It covers the performance and safety features of these appliances as well as the building specifications. In order to ensure compliance with relevant codes, the standard also addresses electrical equipment, wiring, and accessories that are integrated into or provided for use with the appliances.

Specific specifications are given for outdoor appliances, carts, and trailers, including labeling, adherence to self-contained LP-gas supply systems, and the documents required for towing behind a vehicle. It is crucial to remember that this standard does not address road performance or laws governing trailers, as these are controlled by transportation authorities.

Additionally, the standard makes provisions for portable tabletop cooking devices and related fuel delivery systems. These devices can be used indoors or outdoors and were created especially for use in commercial eateries. They aren't made for use in homes, though.
